You have uninsured motorist protection on your own policy
for just such a situation. I think it matches your own liability limits, so if you go state minimus (was $25k in VA back when I sold it) that's the maximum you would be able to collect. You can also add medical payments to most policies that would cover your health expenses in the case where you are injured in an accident and have gone beyond your insurance coverage.
Btw, don't go state minimums on auto insurance. It's worth the extra few bucks to max out your liability insurance, and if you have any significant net worth an umbrella policy is worth it too. Those will cover you if you're sued for anything from a car accident, to somebody injuring themselves on your property, to your kid doing something really stupid and causing financial or physical injury.
