What's this?

There's more out there than many realize, but yeah, we should take more of

the Euro approach there IMO. The local HS here had a culinary program he went through (that also got him paid well in a kitchen at 16, and cut a year off tuition so he could get his BS in 3 yrs), as well as a few others. Other areas have regional programs where all area HS can go. Allowing kids to start making very decent livings as soon as the graduate HS, or even before.

He competed at States and Nationals (I was actually at Nationals in K.C. when we got the news that Bid Laden was dead), and it was pretty cool to see how other states did it, and how prolific and competitive the programs are in some states. Some of the dishes we saw out there were absolutely mind blowing!
