Can somebody explain why people think we won't know the winner

until several days after the election? I realize that there are a bunch of mail in and drop off ballots which can't be counted until Tues morning at the earliest, but even if we get a 20% increase in voters, shouldn't the states be able to count the votes by the evening? The only issue I see is in a close race in those states which allow ballots postmarked by election day - but other than that, shouldn't all the votes be counted election night?
