I worked on the Commerce School's accreditation,

AACSB, saw the GMAT, GRE and GPA of ever grad student in Commerce and Darden. The CV of each professor and Dean. The Deans had to sign a statement the data were accurate.

But, I don't think the Souther States board accredits the curricula, only the faculty and Grad students.

Does NC have a Board of Regents or State Board of Education? They are likely UNC boosters.

Academia is so big on Peer Review, but no one is watching the watchmen.
