Food deserts are a serious concern. We should heavily subsidize vegetables
Just start there. Give farmers billions of dollars to grow healthy fruits and vegetables. The market will find a way to incorporate them into the diet.
It’s what we did with cheap corn, and we are paying the price.
The story for me clarifying how awful the problem is was when I went to Arby’s like 15 years ago. I got two roast beef sandwiches for $2. To be moderately healthy I got a side of broccoli. That was $2.49. Getting cheap unhealthy food is easy. Getting cheap healthy food is not. We should invest in changing that.
